Sloppy Joe Bowls for the Win

🍝Recipe 1-2: Sloppy Joe Bowls with Roasted Spaghetti Squash & Broccoli

Servings: 4  Total Time: 35-45 minutes

Ingredients

Sloppy Joes:

  • 1 tbsp olive or avocado oil
  • 24-28 ounces ground turkey
  • 1 red onion diced
  • 1.5 tbsp tomato paste
  • 12 ounces marinara sauce (ie.Rao’s)
  • 3 cloves minced garlic
  • ¼ cup liquid aminos or soy sauce
  • 1.5 tbsp dijon or yellow mustard
  • 1.5 tsp chili powder
  • ¾ tsp sea salt
  • 1.5 tbsp hot sauce
  • 1.5 tsp apple cider vinegar
  • ¼ tsp crushed red pepper

 

Spaghetti Squash & Broccoli:



  • 1 large spaghetti squash
  • 6 cups broccoli florets
  • 2 tbsp olive oil 
  • ½ tsp sea salt

Instructions:

 

  • Preheat Oven: Preheat oven to 415°F. Line 2 baking sheets with parchment paper/foil.
  • Prepare & Roast Squash: Cut a large spaghetti squash in half and scoop out the seeds. Place cut side down on a parchment lined baking sheet, and bake for 35 minutes. Be ready to add the broccoli (see below) at the 12-minute-remaining mark. Take out of the oven and use a fork to remove the spaghetti strands (pull fork downward on cut side directly into bowls). Serve as directed below within Sloppy Joe bowls.
  • Roast Broccoli: Mix the broccoli florets, oil, and salt well in a bowl. Spread out evenly on a lined baking sheet and add to the oven when the squash has about 12 minutes left. Serve with the Sloppy Joe mixture and squash! Enjoy!

 

  1. Sloppy Joes: Meanwhile, heat oil in a large skillet over medium heat. Add in onion and garlic. Saute for 5-7 minutes until softened. Add in ground beef and stir until browned and cooked through, approximately 5-7 minutes. Stir in remaining Sloppy Joe ingredients; bring to a boil. Reduce heat and simmer for 5 minutes until ready to serve.
  2. Prepare Bowls: Fill bowl with 1-2 cups roasted broccoli. Add 1-2 cups spaghetti squash strings (serve ¼ of entire squash per person). Place sloppy joe mixture over squash.

Light at Night: Reduce spaghetti squash to ¾ cup total for 10 less grams carbohydrates and 60 less calories.
